Coconut caramel

Simple and easy coconut sauce which goes perfect with morning porridges or any dessert (like this amazing black sticky rice or millet apple pie). To be honest – just eat it straight from the pot, it might be equally good idea!




200 ml coconut milk
1 handfull of dried dates (or more if you prefer it sweeter)
1 tsp vanilla essence
pinch of salt
0,5 tsp tapioca flour + 1 tbsp cold water mixed together

Heat up the coconut milk, salt & dates on a low heat. Remove from the stove and blend till it’s velvety smooth. Bring back to boil and add the tapioca&water mixture stirring quickly so the sauce thickens evenly. Cook 2-3 min more, add vanilla essence and voila! Your ultra delicious, sugar-free sauce is ready!
