WHEAT FREE CRUMBLE (WITH BUTTER)

This is a quickie, so will be this post. I play with crumble in recent weeks and it comes out more and less satisfying. There is something hard to imitate in classic wheat flour crumble but I am getting there and this recipe is very satisfying.
I made it with butter which can be replaced with coconut oil BUT I didn’t try it this way so can’t promise the result will be the same. But might be equally good so try, I will for sure as I just bought a huge jar of coconut oil (the lack of it is the only reason I used butter here).

RECIPE

For a medium jar of crumble
6 tbsp chickpea flour
6 tbsp rice flour
3 tbsp sticky rice flour (try potato starch if sticky rice is not available)
¾ cup oats
100 g soft butter
pinch of salt
2 tbsp coconut sugar (add more if you like to indulge in sweet :))
pinch o vanilla or cinnamon (optionally)

Mix te dry ingredients throughoutly and add butter mixing and rubbing the butter and dry mix with your hands untill combined into smaller and bigger lumps.
Cover your favourite fruits with it (I love apple and peach crumble, just cut the fruits into slices,mix, sprinkle cinnamon optionally and cover with crumble) and bake in 180 degrees Celcius for 30-40 min untill golden brown. It tastes delicious by itself or with a drop of coconut sauce.
