Mango and chia pudding (sugar free)

With only 2 ingredients you can make a delicious mango-coconut cream, add two more – chia seeds and starch, to transform it into thick, nutritious pudding to be eaten as one of the daily meals.

RECIPE

1 big or 2 small servings:
1 big, ripe mango
0,5 glass coconut milk (I used Arroy-D)
1 tbsp chia seeds
1,5 tsp starch (I used kuzu) + 1 tbsp water to dissolve
pinch of cinnamon (optional)

Peel and cut the mango than blend it into a smoothie. Put it with the coconut milk and cinnamon into the pot, boil and keep simmering for 5 minutes, stirring often. Add chia seeds and simmer for another 2 minutes. Dissolve the starch in water and add to the pulp stirring immediately and energeticaly so it doesn’t make clumps. Boil for a moment and there, it’s ready! If you want it thicker, add a bit more of water dissolved starch, if it’s too thick to your liking just pour a little coconut milk. In both options – let it boil for a moment while stirring. The pudding is good both hot and cold, can be sprinkled with roasted sesamee seeds or coconut shreds.
